Smushed Banana Sandwich
This may look like I topped a bagel with baby food, but looks aside, this sandwich is delicious. The mashed banana is mixed with shredded coconut, maple syrup and cinnamon. I served it with apple slices which came in handy to scoop up the mash that fell out of the bagels.
Smushed Banana Sandwich
adapted from (never home) maker
Makes 1 sandwich
1 banana
3 tbsp shredded sweetened coconut
2 tsp maple syrup
dash of cinnamon
peanut butter (enough to spread over both halves of a cut bagel)
whole wheat bagel
1) Toast the bagel
2) While bagel is toasting, mash the banana in a bowl and add the coconut, syrup and cinnamon
3) Spread peanut butter over the toasted bagel and top with the banana mix
This is the easiest sandwich ever. I'm not the biggest fan of banana but I really did love this sandwich. I made it for supper but it would easily work for breakfast. Or lunch, for that matter.

Hi Rebek, so here is an idea, how about doing it french toast style, stuff the bread with the pb and cocount/banana schmeer??
Hmm, that does sound like a delicious idea. Maybe I should try that
