Black Bean and Quinoa Tortilla Cups
If two of my previous posts, the Taco Cups and the Black Bean Quinoa Quesidillas, were to mate and reproduce, you would end up with these fancy little cups, that are really adorable.
Black Bean Quinoa Cups

Makes 6 cups, serves 3
Filling:
Ingredients
1/2 cup water
1/4 cup quinoa
1/2 cup cooked black beans (I used canned)
1/4 cup finely diced fresh tomatoes
1/4 cup corn kernels
1/4 cup thinly sliced green onion
1 T minced fresh cilantro (I left the cilantro out)
Bring the water and quinoa to a boil in a small saucepan. Reduce to a simmer, cover and cook for 10 minutes. Turn the heat off and leave the covered saucepan on the burner for an additional 5 minutes. Remove the lid and fluff with a fork. Set aside.
Preheat the oven to 350 F.
Meanwhile, combine all the other ingredients into a bowl. Add the cooked quinoa to the mix.
Take 6 small tortillas and form them into a cone shape, and place into a muffin pan. Spoon the filling equally between the 6 cones. Top each with some grated cheddar cheese. Bake in the oven until cheese is melted and the tortilla cups are a golden brown, approximately 10 minutes.
Serve with salsa, sour cream or pico de gallo (my personal favorite)
